Cheesy Potatoes and Ham Tin Foil Dinners

Here is a quick, tasty recipe for the next time you are heading outdoors to your favorite camping spot. You can prepare this recipe at home or take the ingredients with you camping. We prepared our meals at home and placed them in the cooler, which made it easier, and quicker to cook at the campsite.

6 medium sized potatoes, sliced. Leave skin on.

1/2 cup diced onion.

6 T butter or margarine.

1 Bell pepper, diced.

Shredded Cheddar Cheese.

Breakfast style ham slices or diced ham

Salt and pepper to taste.

Recipe makes six single serving tin foil dinners. You can simply adjust quantities above to make more or less.

Grease or butter 6 sheets of heavy duty tin foil. Arrange sliced potatoes on each sheet of foil, salt and pepper to taste. Divide diced onion and bell pepper between each meal. Place one tablespoon of butter on top of potatoes. Sprinkle each meal with shredded cheese to your liking. Add a ham slice or sprinkle diced ham over each meal. Wrap and seal foil.

Place meals over hot camp fire coals, and cook for 35 minutes or until potatoes are soft. Remove from coals and enjoy.

You can adjust this meal any way you wish. Use different meats, quantities, more cheese, less cheese, add the cheese towards the end of cooking, use your imagination and have fun!
